Closing the Oven Doors

My sweet and dear customers,

It’s bittersweet to announce that Bites Cupcakes & Cake Pops will be closing its oven doors at the end of November.  I have accepted quite the promotion at my OTHER job and I couldn’t be more honored .  Which means that I need to dedicate the majority of time to this new chapter in my life.  All orders that have been placed as of today and for Thanksgiving will obviously still be honored and ready for pick up as discussed!

I cannot even begin to express the gratitude and love I have for my customers over these last two years.  You have inspired me to be greater and I thank each and every one of you from the bottom of my heart.  You are the reason I’ve baked so many cupcakes, rolled & decorated so many cake pops, and the reason I was able to do what I love with such joy.  I will never stop baking, and maybe you’ll see the Bites name again sometime in the future.

With that said, I am toying with the idea of a final cupcake/cake pop sale – so please check my Facebook for updates.

Shower Me with Cupcakes!

I conquered another cupcake challenge this weekend: individual/personalized cupcakes for a bridal shower.

Of course this wasn’t just ANY bridal shower, my best friend will be getting married in March and I was so honored to help out for her shower!  I was so excited that she wanted to have my cupcakes in lieu of a traditional cake, and happy to know that these would also serve as the favors for all the guests.

A few days before the shower, we got together to prep these cute single-cupcake boxes that were decorated with her wedding color.

After having all 100 boxes decorated and ready to go, it was time to start the baking!  I always make sure I have all my ingredients out before I start, that saves me the trouble of having to go buy eggs at the last minute – because that’s happened to me on more than one occasion! So I started with the red velvets, and my favorite Pandora station on my Mac 🙂

And why not give your eggs some character?!

I also decided to finish off my last bottle of white wine – so I have an excuse to buy more 😉

While my Red Velvets (which are also the Bride’s favorite) were in the oven, I got to piping the Bride & Groom’s initials that would go on every single cupcake.

I also made the Groom’s favorite cupcake – Strawberry Jam!
I will admit that I was a little afraid that the cupcake wouldn’t fit in the box just right, or that the initials wouldn’t be the right size once in the box.  But I tried my first one out, and they were a perfect fit – just like the Bride & Groom ❤  So voila! I had my first box, and was eager to see how they would all look once I finished all 100.

Not too shabby if I do say so myself!

As one of the bridesmaids, another duty was to decorate the tables for the shower.  So with the help of Pinterest and 2 of my fellow bridesmaids, beautiful centerpieces were made!  Each table was decorated with two tall glasses filled with coffee beans & a white tea light, then some fresh carnations in the center.

And each seat had their own cupcake 🙂

Another beautiful idea we came up with was the “Advice table” for the bride.  Each guest would  jot down some advice for the bride on love, married life, or just something encouraging to make her laugh.  The table was decorated with two gorgeous flower arrangements from my favorite local florist, pictures from the couple’s engagement session and purple rose petals.

To me, this was such a special event to have been a part of because the Bride & Groom (and their handsome son) have such a special place in my heart.  After months of planning, I can’t wait to see how the wedding comes together!

I am also giving a $2 discount if you bring the box back for any orders after that.  So if you plan to keep “refilling” your cupcake supply, save that box!

Let the baking begin!

First off, I would like to apologize for the month-long hiatus that has kept me from posting or creating any new treats.  On the other hand, I would like to extend my sincere appreciation to my dedicated & sweet customers that have waited patiently while I finished my undergraduate career at UTEP last week.  It’s been such an adventure and I can’t believe I can finally call myself a “College Graduate!”

With that said, these next few days will be focused on creating 3 new holiday cupcake flavors AND a few new Christmas cake pops. I know it’s a little last minute, so that just means you’ve got to keep checking my Facebook from now until Saturday – because once I post holiday photos, emails start pouring in and order space is limited!

Happy Breaking Dawn Day!

Okay, I’ll admit it… I LOVE TWILIGHT!  So it was absolute excitement when “a dozen Twilight-inspired cupcakes” were requested by one of my customers.  Naturally, I suggested red velvet to go with these vampire cupcakes.

I always see cupcakes decorated so beautifully with fondant, but I just can’t get my taste buds to agree with it.  So I try and manipulate chocolate to look just as nice.

And with that said, I present to you…. one of my favorite cupcake dozens ever…

Bestie and Bacon

So today is one of my best friends’ birthdays! She turns 23 years OLD today and this weekend I decided to give her a little treat.

What does bacon have to do with cupcakes you ask? EVERYTHING.  One thing my best friend and I have in common is our love for bacon.  It goes with just about anything, even cupcakes.  So I decided to try and make some bacon even more delicious (meaning even more unhealthy).

I invested in some better quality bacon – applewood…. my mouth is watering all over again.

Then I decided to grab some brown sugar and cinnamon.

And there you have it, I had my bacon coating.

Bake it in the oven at 375 degrees for about 25 minutes (turning over once).

Voila! Delicious Cinnamon-Sugared Bacon.

Now how can I make this treat better than just saying “Here is a strip of bacon, Happy Birthday”?

Top it onto her favorite cupcake (jumbo-style) – Dark Chocolate with a TINY bit of White Chocolate Buttercream.

Now THERE’S a birthday treat!
