Closing the Oven Doors

My sweet and dear customers,

It’s bittersweet to announce that Bites Cupcakes & Cake Pops will be closing its oven doors at the end of November.  I have accepted quite the promotion at my OTHER job and I couldn’t be more honored .  Which means that I need to dedicate the majority of time to this new chapter in my life.  All orders that have been placed as of today and for Thanksgiving will obviously still be honored and ready for pick up as discussed!

I cannot even begin to express the gratitude and love I have for my customers over these last two years.  You have inspired me to be greater and I thank each and every one of you from the bottom of my heart.  You are the reason I’ve baked so many cupcakes, rolled & decorated so many cake pops, and the reason I was able to do what I love with such joy.  I will never stop baking, and maybe you’ll see the Bites name again sometime in the future.

With that said, I am toying with the idea of a final cupcake/cake pop sale – so please check my Facebook for updates.

Cupcake Tasting Parties?!

Oh yes, my friends.

I’ve got a sugar rush of ideas and am so excited to start cupcake tasting parties!  I haven’t completely worked out all the details yet, but they are definitely in the works at this very moment.



Love at first Bite.

When I was first asked to do a wedding order I figured, “How hard can this be, right?  It’s only 300 cupcakes, not 500.”  Well let me tell you, that 300 sure did feel like 500!  For a girl who works from her kitchen at home, with one oven, and one standing mixer… it was definitely a challenge.  Although looking through my pictures of the final product, I would have done it all over again.

Luckily for me, the bride & groom were such a pleasure to work with.  They’re such a beautiful couple who, judging by their Crossfit-like frames, don’t seem to eat very many cupcakes!  But that certainly didn’t stop them from tasting as many cupcakes as they could until they chose the perfect flavors for their perfect day.  After a sugar rush of a cupcake tasting, the flavor winners were:

  • Espresso Cupcake: Mocha Cupcake w/Espresso Buttercream
  • The Hawaiian: Coconut Cupcake w/Pineapple filling, topped w/Cream Cheese frosting, toasted coconut, fresh pineapple wedge, and a cherry
  • Strawberry Champagne: Champagne Cupcake w/Strawberry filling, topped w/ Champagne Buttercream and a fresh strawberry slice
  • Red Velvet: Classic Red Velvet Cupcake w/Cinnamon Cream Cheese frosting

The bride had also picked one of the most classy cupcake stands I had ever seen (which I believe was made specifically for the occasion).

The process of making all these cupcakes was a grueling one.  And one that I could not have accomplished without my helper – aka my mom.  We worked together for hours to make sure everything was just perfect, right up until the last cupcake was placed on that stand.  I wouldn’t want anything less for a couple who chose to have cupcakes instead of a traditional wedding cake.

With all that said, I could not have been happier with the outcome and was pleased to hear great feedback from the newlyweds, as well as many of the wedding guests.

Easter Bites!

Well well well my sweet friends, it’s been a while but it’s been a busy few weeks!  I don’t know how I’ve failed to share all the exciting things that have been going on with yours truly.

Let’s start with the biggest and most exciting piece of news… this month was Easter!
Which means…..

Bites turned One Year old this month!!!

I made my very first batch of cake pops last year on Easter, so I thought it only be fitting to make the classic Easter eggs and chicks again.

Unfortunately, I wasn’t able to make as many Easter treats as I wanted – I was in New York City doing some cupcake “research,” which I will gladly share another time 🙂

So once again, thanks to all my wonderful friends who still haven’t had enough sugar yet!


One More Day.

24 hours.

1440 minutes.

86400 seconds.

Inspired by this Disney ad, I am surprisingly stoked for this Leap Day tomorrow.  For those of you who weren’t aware, February 29th only happens once every four years and this happens to be the year we have 366 days instead of 365.  So imagine what you could do with a WHOLE EXTRA DAY.  Like we always say, “if only there were more hours in the day.”  Well this year, you get 24 more hours!  Unfortunately this Leap Day falls on a Wednesday and that doesn’t stop the working world, but I challenge you to make the best out of this extra day.

Most of us can’t really take the entire day to do those “extra things”, so think small:

  • Write a Thank You letter to someone – and send it via snail mail
  • Get a workout in today – it’s hard to get there, but I guarantee you’ll feel better afterwards
  • Wear a cute outfit to work today, or just that new blazer you’ve been meaning to wear
  • Have a coffee date with a friend you haven’t seen, or that new person you want to get to know better

As I was looking up some info on Leap Days, I came across a list of Leap Year freebies from the Washington Post.  Keep in mind that that list is for the DC area, so just double check local stores to see if they’re also participating.

Shower Me with Cupcakes!

I conquered another cupcake challenge this weekend: individual/personalized cupcakes for a bridal shower.

Of course this wasn’t just ANY bridal shower, my best friend will be getting married in March and I was so honored to help out for her shower!  I was so excited that she wanted to have my cupcakes in lieu of a traditional cake, and happy to know that these would also serve as the favors for all the guests.

A few days before the shower, we got together to prep these cute single-cupcake boxes that were decorated with her wedding color.

After having all 100 boxes decorated and ready to go, it was time to start the baking!  I always make sure I have all my ingredients out before I start, that saves me the trouble of having to go buy eggs at the last minute – because that’s happened to me on more than one occasion! So I started with the red velvets, and my favorite Pandora station on my Mac 🙂

And why not give your eggs some character?!

I also decided to finish off my last bottle of white wine – so I have an excuse to buy more 😉

While my Red Velvets (which are also the Bride’s favorite) were in the oven, I got to piping the Bride & Groom’s initials that would go on every single cupcake.

I also made the Groom’s favorite cupcake – Strawberry Jam!
I will admit that I was a little afraid that the cupcake wouldn’t fit in the box just right, or that the initials wouldn’t be the right size once in the box.  But I tried my first one out, and they were a perfect fit – just like the Bride & Groom ❤  So voila! I had my first box, and was eager to see how they would all look once I finished all 100.

Not too shabby if I do say so myself!

As one of the bridesmaids, another duty was to decorate the tables for the shower.  So with the help of Pinterest and 2 of my fellow bridesmaids, beautiful centerpieces were made!  Each table was decorated with two tall glasses filled with coffee beans & a white tea light, then some fresh carnations in the center.

And each seat had their own cupcake 🙂

Another beautiful idea we came up with was the “Advice table” for the bride.  Each guest would  jot down some advice for the bride on love, married life, or just something encouraging to make her laugh.  The table was decorated with two gorgeous flower arrangements from my favorite local florist, pictures from the couple’s engagement session and purple rose petals.

To me, this was such a special event to have been a part of because the Bride & Groom (and their handsome son) have such a special place in my heart.  After months of planning, I can’t wait to see how the wedding comes together!
