When I was first asked to do a wedding order I figured, “How hard can this be, right? It’s only 300 cupcakes, not 500.” Well let me tell you, that 300 sure did feel like 500! For a girl who works from her kitchen at home, with one oven, and one standing mixer… it was definitely a challenge. Although looking through my pictures of the final product, I would have done it all over again.
Luckily for me, the bride & groom were such a pleasure to work with. They’re such a beautiful couple who, judging by their Crossfit-like frames, don’t seem to eat very many cupcakes! But that certainly didn’t stop them from tasting as many cupcakes as they could until they chose the perfect flavors for their perfect day. After a sugar rush of a cupcake tasting, the flavor winners were:
- Espresso Cupcake: Mocha Cupcake w/Espresso Buttercream
- The Hawaiian: Coconut Cupcake w/Pineapple filling, topped w/Cream Cheese frosting, toasted coconut, fresh pineapple wedge, and a cherry
- Strawberry Champagne: Champagne Cupcake w/Strawberry filling, topped w/ Champagne Buttercream and a fresh strawberry slice
- Red Velvet: Classic Red Velvet Cupcake w/Cinnamon Cream Cheese frosting
The bride had also picked one of the most classy cupcake stands I had ever seen (which I believe was made specifically for the occasion).
The process of making all these cupcakes was a grueling one. And one that I could not have accomplished without my helper – aka my mom. We worked together for hours to make sure everything was just perfect, right up until the last cupcake was placed on that stand. I wouldn’t want anything less for a couple who chose to have cupcakes instead of a traditional wedding cake.
With all that said, I could not have been happier with the outcome and was pleased to hear great feedback from the newlyweds, as well as many of the wedding guests.
